About Ruim 95 procent van de Nederlanders eet vlees. We eten 80 kilo per jaar, dat is schoon aan de haak 40 kilo, en dat komt neer op een goeie ons per dag. De helft daarvan is varken, de rest met name kip en rund. Vlees is en blijft populair, en bevat veel belangrijke voedingsstoffen. Maar de effecten voor het milieu zijn alarmerend. Toch maar iets minder vlees gaan eten? Atze Jan van der Goot doet onderzoek naar vleesvervangers aan de Wageningen Universiteit.
