Abstract Recente incidenten met paardenvlees in voedingsmiddelen laten zien dat bij het etiketteren van complexe voedingsmiddelen, zoals lasagne, fouten worden gemaakt. Juiste informatie over de aard van grondstoffen in voedingsmiddelen is echter van belang voor de keuzevrijheid van consumenten. Dit geldt vooral voor consumenten met specifieke dieetwensen vanwege bijvoorbeeld allergieën, religie, vegetarisme, of de wens om duurzame producten te produceren en consumeren. Kennis van de samenstelling van het product is nodig om fraude te kunnen opsporen.
