In the last decades consumers preferences have continuously triggered changes in quality regulations and the implementation of various private quality standards. New quality demands also imply new coordination arrangements to support transactions between food companies and their suppliers. To coordinate these transactions, food companies (i.e. buyers) use different types of governance structures (GSs) made up of different coordination mechanisms (CMs). These mechanisms are used to coordinate aspects such prices, quality, and allocation of resources (e.g. services, inputs). The general goal of this thesis is to analyse the complexity behind the GSs used to support transactions in the Brazilian Pork Chain (BPC). Furthermore, this thesis examines how these GSs impact on farmer performance and farmer investment. Brazil is the fourth world producer and exporter of pork. The quality standards and GSs used in this supply chain offer an interesting background to be examined with implications for theory and management. Chapter 1 presents a general introduction depicting the research problem, the research questions and the theoretical framework used in this thesis hich is grounded on Transaction Costs Economics, Supply Chain Management and Networks Theory. Chapter 2 examines, through an exploratory approach, the relationships between quality requirements and CMs. This study allows us to demonstrate that, in the BPC, chain actors use a wide array of CMs to support a non-diverse set of quality requirements. Quality requirements are based on public regulations and on a few specific requirements set by specific customers. The differences in CMs regard aspects such as base prices, criteria for bonuses, control on inputs and processes and resource allocation. Chapter 3 addresses the complexity of CMs embedded in a GS and the use of plural forms of coordination by individual buyers. A framework setting values of CMs on price, volume, quality and resource allocation, was used to demonstrate that a single GS (e.g. a contract) may include CMs on distinct positions within the market-hierarchy continuum. In addition, this framework is used, in four case studies, to support analyses on how and why individual buyers use plural CMs to support similar transactions. The main explanations that were found were the need to handle market fluctuations, the implementation of new and specific quality requirements, to adopt to CMs used by competitors, and to deal with bargaining power of specific groups of farmers. Chapter 4 applies structural equation modelling (SEM) to analyse influences of vertical (buyer-farmer) and horizontal relationships (farmer-farmer) on performance of pig farmers. Data were obtained through a survey questionnaire applied to 269 pig farmers. The results demonstrate that vertical and horizontal relationships improve performance and that horizontal relationships improve information exchange. In addition, the findings suggest that the context in which transactions take place (i.e. spot market, contracting), may affect these relationships. Chapter 5 analyses, based on the farmer survey, influences of buyer support on famer performance and farmer investments. A SEM analysis was applied to 199 farmers that deliver pigs through contracts. The results demonstrate positive influences of buyer support on farmer performance and farmer investment capacity. Chapter 6 provides a general discussion including theoretical, policy and management implications.

Biologisch opgefokte gelten zijn socialer en spenen meer en zwaardere biggen dan gangbaar opgefokte gelten. Biggen die al in de zoogperiode een stukje weide krijgen als uitloop hebben na het spenen sneller diarree, maar doen het tot 25 kg beter dan biggen zonder weidegang. Dit zijn de belangrijkste conclusies uit de allerlaatste proef van 50 jaar onderzoek op het varkensproefbedrijf in Raalte.

The aim of this thesis was to investigate the development of pigs that were raised in a newly developed group housing system for lactating sows and their litters, with a focus on the transition around weaning and performance later in life. The starting point of our multi-suckling (MS) system was the natural behaviour of pigs, and the system consisted of 5 farrowing pens connected to a communal area, which included a communal feeding area. Litters were grouped at 1 week of age. Compared with a conventional farrowing system (in which a sow and her piglets are housed in a pen in which the sow is confined individually in a crate), the MS system provided a more spacious and complex environment, with more social and physical enrichment. Before weaning, we found that MS piglets showed more feed-directed behaviour and less damaging behaviours, such as tail biting, than conventionally housed piglets. After weaning at 4 weeks of age, when housed in a more physically and socially enriched pen, MS-raised piglets showed a higher feed intake, a higher weight gain, more play behaviour, and less maladaptive behaviour than the conventionally raised piglets that were housed in a standard nursery pen. In a follow-up study, in which all pigs were housed under equal and enriched conditions after weaning, we found that piglets raised in the MS system had a higher feed utilisation and a lower carbohydrate absorption in an oral sugar absorption test in the early post-weaning phase. In a subsequent study, the same animals were used to investigate their social and cognitive development, using behaviour tests during which pigs competed for access to feed. We found few differences, but there were indications that the pigs raised pre-weaning in the MS system made more use of social information than the conventionally raised pigs. Lastly, we studied effects of different weaning procedures in the MS system (gradual weaning during 9 weeks of lactation vs. abrupt weaning at 4 weeks of age). Weaning seemed to have less impact for the pigs subjected to the gradual weaning treatment (reflected in weight gain and maladaptive behaviour). Also on the long term during the finishing phase (during which both groups were housed equally from 9 weeks of age), the pigs subjected to the gradual weaning treatment showed less maladaptive behaviour and had fewer body lesions than abruptly weaned pigs. To conclude, the multi-suckling system seems promising for improving pig performance, behaviour, and welfare, especially in combination with a more gradual weaning procedure during an extended lactation.

Op Varkens Innovatie Centrum Sterksel is het effect onderzocht van twee speenstrategieën op de ontwikkeling (groei, voeropname, gezondheid, spelgedrag en beschadigend gedrag) van biggen uit een groepskraamsysteem met vijf zeugen en haar biggen. In de ene groep werden de biggen abrupt gespeend op 4 weken leeftijd (A4). In de andere groep werden de biggen geleidelijk gespeend op 9 weken leeftijd door toepassing van intermittent suckling (IS9). De A4 biggen bleven na spenen in een groep van 35 bij elkaar in een verrijkt biggenhok. Op een leeftijd van 9 weken zijn zowel de A4 als de IS9 biggen opgelegd in verrijkte vleesvarkenshokken voor 35 dieren. De bevindingen van het onderzoek bij de zeugen, biggen en vleesvarkens zijn beschreven in dit rapport.

Gut microbial colonization and immune competence development are affected by early-life environmental and dietary interventions. The interplay between microbiota in the intestinal tract and the gut mucosal surfaces of the host is critical for the development of an accurate immune competence. In the present study we intervened during early life of suckling piglets by a daily oral administration of fructooligosaccharides (FOS solution) from day 2 – 14 and investigated the effects on intestinal microbiota composition (by 16S rDNA sequencing) and biological processes of the intestinal mucosal tissue (by genome-wide intestinal gene expression analysis) during the suckling phase.

Dat er vanwege resistentie ontwikkeling terughoudend met antibiotica moet worden omgesprongen is inmiddels gemeengoed. Wetenschappelijk onderzoek bij biggen op onderzoeksbedrijf Sterksel en bij Wageningen UR Livestock Research wijst nu ook uit dat antibiotica toediening in de eerste levensfase een langdurige negatieve invloed op de afweer heeft.

A significant contribution to microbial colonization of piglets comes from the sow: via vertical transmission of vaginal flora during birth and transmission of mucosal immune memory and flora by feaces, colostrum and milk. In this study we determine the effect of an maternal nutritional intervention with an antibiotic on early microbial colonization of piglets. We used antibiotic treatment as a harsh intervention to investigate the hypothesis that the microbial composition in sows, may have an effect on the early microbial colonization of piglets.

Op VIC Sterksel is de ontwikkeling (groei, voeropname, gezondheid, sociaal gedrag, spelgedrag en beschadigend gedrag) van biggen die opgegroeid zijn in een groepskraamsysteem en na spenen gehuisvest zijn in een verrijkt hok in een groep van 40 biggen vergeleken met de ontwikkeling van biggen die opgegroeid zijn in een traditioneel kraamhok en na spenen als toom bij elkaar zijn gehouden in een gangbaar hok met 10 biggen. Bij opleg in de vleesvarkensstal zijn alle biggen opgelegd in traditionele vleesvarkenshokken met 12 dieren per hok. De bevindingen van het onderzoek bij de zeugen, biggen en vleesvarkens zijn beschreven in dit rapport.

Op Varkens Innovatie Centrum Sterksel is onderzocht wat het effect is van het verstrekken van voer en drinkwater via een geoptimaliseerd voer- en drinkwatersysteem (Feeder) of via 2-vaksdroogvoerbakken en drinkbakjes (controlegroep) op de groei, voeropname, waterverbruik, voederconversie, eet- en drinkgedrag en gezondheid van gespeende biggen. Op VIC Sterksel is onderzocht wat het effect is van het voerniveau van zeugen tijdens de laatste 8 dagen van een zes weekse lactatie waarin ze ook drachtig zijn op de gewichts- en spekdikte ontwikkeling van de zeugen, de resultaten van de biggen en het aantal levend en dood geboren biggen in de volgende worp. De resultaten van het onderzoek zijn in dit rapport beschreven.

It is hypothesised that during immune system activation, there is a competition for amino acids (AA) between body protein deposition and immune system functioning. The aim of the present study was to quantify the effect of immune system activation on N retention and AA metabolism in growing pigs, depending on dietary protein supply. A total of sixteen barrows received an adequate (Ad) or restricted (Res) amount of dietary protein, and were challenged at day 0 with intravenous complete Freund's adjuvant (CFA). At days - 5, 3 and 8, an irreversible loss rate (ILR) of eight AA was determined. CFA successfully activated the immune system, as indicated by a 2- to 4-fold increase in serum concentrations of acute-phase proteins (APP). Pre-challenge C-reactive protein concentrations were lower (P<0·05) and pre- and post-challenge albumin tended to be lower in Res-pigs. These findings indicate that a restricted protein supply can limit the acute-phase response. CFA increased urinary N losses (P= 0·04) and tended to reduce N retention in Ad-pigs, but not in Res-pigs (P= 0·07). The ILR for Val was lower (P= 0·05) at day 8 than at day 3 in the post-challenge period. The ILR of most AA, except for Trp, were strongly affected by dietary protein supply and positively correlated with N retention. The correlations between the ILR and APP indices were absent or negative, indicating that changes in AA utilisation for APP synthesis were either not substantial or more likely outweighed by a decrease in muscle protein synthesis during immune system activation in growing pigs.
Dietary Linoleic and a-Linolenic Acid Affect Anxiety-Related Responses and Exploratory Activity in Growing Pigs

Background: Growing evidence suggests that the dietary ratio of linoleic acid (LA) to a-linolenic acid (ALA), the precursors of arachidonic acid (AA) and docosahexaenoic acid (DHA), respectively, may affect behavior in mammals. Objective: This study aimed at evaluating the impact of dietary LA and ALA intake on behaviors of growing pigs, a pertinent model for human nutrition. Methods: At 7 wk of age, 32 pigs were allocated to 4 dietary treatments varying in daily intake of LA (1.3 and 2.6 g · kg body weight-0.75 · d-1 for low- and high-LA groups, respectively) and ALA (0.15 and 1.5 g · kg body weight-0.75 · d-1 for low- and high-ALA groups, respectively) for 4 wk. Between days 12 and 18, general behavior in the home pen was observed and pigs were subjected to an open field and novel object test. At 11 wk of age, brain fatty acid composition was analyzed. Results: Compared with high LA intake, low LA intake increased the time spent on exploration, particularly nosing in the home pen (P <0.05) and the open field (P <0.05), and tended to reduce the time spent lying with eyes open in the home pen (P = 0.09). Time spent lying with eyes open also tended to be affected by LA × ALA interaction (P = 0.08). A high-LA/high-ALA intake (ratio of 2; P <0.05) and a low-LA/high-ALA intake (ratio of 1; P = 0.06) decreased the latency to approach the novel object compared with a low-LA/low-ALA intake (ratio of 9). DHA in the frontal cortex was positively correlated with exploratory behaviors in the home pen (rs = 0.56, P <0.01), whereas AA was negatively correlated with time spent lying with eyes closed (rs = –0.48, P <0.01). Conclusions: Low LA intake and a low dietary LA:ALA ratio increased exploration and decreased anxiety-related behaviors in pigs. It is suggested that changes in brain DHA and AA induced by dietary LA and ALA intake mediate these behavioral changes.

The intestine may play a pivotal role due to diet-induced alterations in microbiota composition and increased permeability to bacterial lipopolysaccharide inducing metabolic inflammation. Early programming of metabolic disorders appearing in later life is also suspected, but data on the intestine are lacking. Therefore, we hypothesized that early disturbances in microbial colonization have short- and long-lasting consequences on selected intestinal components including key digestive enzymes and protective inducible heat shock proteins (HSP). The hypothesis was tested in swine offspring born to control mothers (n = 12) or mothers treated with the antibiotic amoxicillin around parturition (n = 11), and slaughtered serially at 14, 28 and 42 days of age to assess short-term effects. To evaluate long-term consequences, young adult offspring from the same litters were offered a normal or a fat-enriched diet for 4 weeks between 140 and 169 days of age and were then slaughtered. Amoxicillin treatment transiently modified both mother and offspring microbiota. This was associated with early but transient reduction in ileal alkaline phosphatase, HSP70 (but not HSP27) and crypt depth, suggesting a milder or delayed intestinal response to bacteria in offspring born to antibiotic-treated mothers. More importantly, we disclosed long-term consequences of this treatment on jejunal alkaline phosphatase (reduced) and jejunal and ileal dipeptidylpeptidase IV (increased and decreased, respectively) of offspring born to antibiotic-treated dams. Significant interactions between early antibiotic treatment and later diet were observed for jejunal alkaline phosphatase and sucrase. By contrast, inducible HSPs were not affected. In conclusion, our data suggest that early changes in bacterial colonization not only modulate intestinal architecture and function transiently, but also exert site- and sometimes diet-specific long-term effects on key components of intestinal homeostasis.

At Swine Innovation Centre Sterksel the effects of genetic background, birth weight and feeding strategy on the performance and financial results of piglets and growing and finishing pigs were investigated. The results are described in this report.
