Abstract De kwaliteit van champignons wordt beperkt door bruinverkleuring, hoedopening, steelgroei en bacterievlekken. Nagegaan is of ethanol de hoedopening en de steelgroei van geoogste witte champignons kan remmen zonder dat de andere kwaliteitsbepalende kenmerken nadelig beïnvloed worden.
