Abstract De monsters entrecôte en rosbief, afkomstig uit 19 slagerijen zijn onderzocht op hun postitieve kwaliteit: het gehalte aan vet, de vocht/eiwit-verhouding en de collageen/eiwit-verhouding. Bij de entrecôtes is eveneens de grootte van de karakteristieke vetrand bepaald.
