    Large amounts of data from meat inspections can be used as a tool to support interventions for improvement of herd health. We applied time-series analyses on 3.5 years of meat inspection data of two pig slaughterhouses to identify differences in health aberration patterns over time at farm-level. A negligibly evidence of seasonality and a substantial trend pattern in percentage aberrations over time were identified. Differences exist in percentage health aberrations between the farms and months. This distinction is more elaborate than just grouping farms on basis of aberration incidence.

    A quantitative approach towards a better understanding of the dynamics of Salmonella spp. in a pork slaughter-line

    Pork contributes significantly to the public health disease burden caused by Salmonella infections. During the slaughter process pig carcasses can become contaminated with Salmonella. Contamination at the slaughter-line is initiated by pigs carrying Salmonella on their skin or in their faeces. Another contamination route could be resident flora present on the slaughter equipment. To unravel the contribution of these two potential sources of Salmonella a quantitative study was conducted. Process equipment (belly openers and carcass splitters), faeces and carcasses (skin and cutting surfaces) along the slaughter-line were sampled at 11 sampling days spanning a period of 4 months. Most samples taken directly after killing were positive for Salmonella. On 96.6% of the skin samples Salmonella was identified, whereas a lower number of animals tested positive in their rectum (62.5%). The prevalence of Salmonella clearly declined on the carcasses at the re-work station, either on the cut section or on the skin of the carcass or both (35.9%). Throughout the sampling period of the slaughter-line the total number of Salmonella per animal was almost 2log lower at the re-work station in comparison to directly after slaughter. Seven different serovars were identified during the study with S. Derby (41%) and S. Typhimurium (29%) as the most prominent types. A recurring S. Rissen contamination of one of the carcass splitters indicated the presence of an endemic 'house flora' in the slaughterhouse studied. On many instances several serotypes per individual sample were found. The enumeration of Salmonella and the genotyping data gave unique insight in the dynamics of transmission of this pathogen in a slaughter-line. The data of the presented study support the hypothesis that resident flora on slaughter equipment was a relevant source for contamination of pork.
    Bruises in Chilean cattle: their characterization, occurrence and relation with pre-slaughter conditions

    Bruises on cattle carcass affect the quality of the meat and are indicators of poor welfare conditions. According to the literature the occurrence of bruises is related to pre- slaughter conditions, however their contribution is not clear for Chilean cattle. The aim of this thesis was to provide a better understanding of the relationship between pre-slaughter factors and the occurrence of bruises -from loading until slaughter- under Chilean conditions. Therefore in the first study slaughter records of two Chilean slaughterhouses were analysed.It showed that cows and oxen had higher risk to present bruises compared to steers and heifers. Moreover, animals that passed through a livestock market were more prone to present bruises than animals that came directly from the farm. A large difference in carcass bruise prevalence was found between slaughterhouses and this discrepancy was attributed to differences in the use of the Chilean scoring system and to several constraints of the system itself. Thus a new scoring system was developed and its reliability was assessed showing a highagreement when only one observer performs the scoring. An inventory of the gross characteristics of bruises, based on the refined bruising protocol, was carried out. Animals passing through a livestock market have more bruises than animals transported directly from the farm to the slaughterhouse. This thesis presents evidences of rough handling and animals beaten by sticks at markets.In the last study the causal event of bruises during the pre-slaughter periodwas assessed. It showed that rough handling due to inappropriate use of aids to drive animals during loading and unloading, and inadequate stunning facilities at the slaughterhouse were the areas of most risk for bruising. It was concluded that improvements in the design and maintenance of appropriate structures and training of stock people will reduce the occurrence of bruises and in consequence will lead to better welfare conditions of cattle for slaughter.

    De huidige voorschriften voor transport van varkens zijn nauwelijks gebaseerd op wetenschappelijk onderzoek . Dat maakt het moeilijk om (EU-)regelgeving op dit gebied aan te scherpen. In dit kader heeft het ministerie van LNV Wageningen UR Livestock Research gevraagd onderzoek te doen naar hoe de transportcondities van vleesvarkens en slachtzeugen verbeterd kunnen worden. Het onderzoek naar de transportcondities van vleesvarkens wordt in samenwerking met het Duitse Friedrich-Loeffler-Instituts (FLI) uitgevoerd. Daarnaast wordt onderzocht of op onderdelen het welzijn van varkens op de slachterij tot aan het doden kan worden verbeterd. Beide projecten worden gefinancierd door het ministerie van LNV.

    Beef is considered to be an important source of food-borne disorders caused by the bacteria Escherichia coli O157:H7 (VTEC O157). Through the beef-supply chain, this bacterium can pose a risk to public health. The objective of this research is toprovide quantitative insight in the cost-effectiveness of interventions to control VTEC O157 at two levels of the Dutch beef-supply chain: dairy farms and industrial beef slaughterhouses.At the slaughterhouse level, seven decontamination measures were evaluated, namely hot-water wash, lactic-acid rinse, trimming, steam-vacuum, steam-pasteurization, hide-wash with ethanol and gamma irradiation. The effectiveness of the decontamination measures was estimated based on a stochastic epidemiological simulation model. The net costs of the decontamination measures were calculated with a deterministic economic model. To assess the effectiveness of on-farm interventions, a transmission model that mimics the dynamics of VTECO157 bacteria in a typical Dutch dairy herd, was used. The evaluated on-farm interventions were vaccination, diet modification, probiotics (colicin) and additional hygiene. The net costs of the on-farm interventions were based on a deterministic economic model. The effectiveness of the on-farm interventions and slaughterhouse decontamination measures was expressed as the prevalence of contaminated carcass quarters. The baseline prevalence (i.e., without intervention) was estimated to be 4.3%. The net costs of implementing single decontamination methods at the slaughterhouse were calculated to be 0.22 to 0.65 per carcass quarter which is 16% to 40% of the net profit per carcass. The costs of combining decontamination methods at the slaughterhouse vary from 0.44 to 1.88 per carcass quarter and the costs of irradiation were estimated at 4.65 per carcass quarter. The annual costs of implementing on-farm interventions for the supplying dairy farms were calculated to be 1.75, 2.25, 18 and 40 per carcass quarter for probiotics, vaccination, additional hygiene and diet modification respectively. It is concluded that: i) applying decontamination measures at the slaughterhouse level is more cost-effective than applying interventions at the farm level or at the chain level (i.e., both slaughterhouse and farm levels), ii) carcass trim and steam-pasteurization are the most cost-effective slaughterhouse interventions, and iii) vaccination and colicin supplementation have the best cost-effectiveness ratios of the on-farm interventions.

    This report looks at levels of acceptance among broiler farmers, poultry slaughterhouses and consumers of eleven possible measures by which the infection of poultry meat with Campylobacter could be reduced in the Netherlands. The results of a survey showed that there is little support among broiler farmers and poultry slaughterhouses for additional measures in combating Campylobacter in the chicken meat chain. Broiler farmers and slaughterhouses are not convinced that extra measures would have a positive effect, and they fear that such measures would bring extra expense and sales problems. Consumers are generally not overly concerned with regard to Campylobacter infection.

    In het Varkenshouderij Ketenproject Limburg (VarKeL) hebben deelnemers uit de fokkerij (Topigs), varkenshouders (LLTB) en slachterijen (Dumeco en HMG) zich onder begeleiding vanuit onderzoeksinstelling LEI en adviesbureau Area Advies gericht op het bepalen van de mogelijkheden om ketenverliezen in de varkenshouderij terug te dringen. Dit rapport geeft concrete verbetermogelijkheden aan op het gebied van informatie en communicatie, alternatief prijs-/planningssysteem, marktgerichte productie en ketenkosten. Hiermee kan de doelstelling worden bereikt, namelijk om door ketenoptimalisatie te komen tot een kostenreductie van € 0,05 per kilogram geslacht gewicht. Reduction of economic losses in the pig chain In the Limburg Pork Supply Chain Project (VarKeL) participants from pig breeding (Topigs), pig farmers (LLTB) and slaughterhouses (Dumeco and HMG), under the supervision of the LEI research institution and the Area Advies advisory bureau, have joined together to determine the possibilities for reducing chain losses in pig farming. This report gives concrete points for improvement in the field of information and communication, alternative price/planning system, market-oriented production and chain costs. With those improvements the aim of the project can be achieved, namely a cost reduction of € 0.05 per kg of slaughter weight through chain optimisation.
