    Vlees eten doe je niet meer zomaar. Vlees en alles daarom heen staat enorm in de schijnwerpers. Vanuit voedingsoogpunt blijft vlees zeer waardevol hoewel teveel consumptie van rood vlees de kans op darmkanker verhoogt. Vlees blijft echter ontzettend lekker maar productie en consumptie ervan is te ver doorgeslagen. Het moet anders en duurzamer. Een reis langs de vleeswereld.

    When we were children learning the names of animals, farm utensils and food products from picture books, talking about farming animals and related food products appeared simple. However, the intricate realities of modern-day farming practices differ momentously from this primary reference - the picture books. The topic brings about polarized responses, both rationally and emotionally, reflecting very diverse outlooks on the world. This dissertation reports on a research, set in the Netherlands and Turkey, that was designed to improve our understanding of the everyday-life construction of the acceptability -or non-acceptability- ofkeeping and killing animals for food, or in other words: to disentangle the domestic contract.

    Wakker Dier wil graag de omvang van de vleesconsumptie per hoofd van de bevolking in Nederland weten. Tot en met 2012 leverde het Productschap voor Vee, Vlees en Eieren deze informatie. Door de opheffing van het Productschap zijn er geen cijfers over de vleesconsumptie per hoofd van de bevolking na 2012 beschikbaar. Wakker Dier heeft daarom het LEI gevraagd om de vleesconsumptie per hoofd van de bevolking in Nederland in 2013 en 2014 te berekenen. Ook heeft Wakker Dier gevraagd de cijfers voor 2013 en 2014 te vergelijken met de jaren daarvoor, zodat trends in de vleesconsumptie zichtbaar worden. In deze notitie geven we een overzicht van de vleesconsumptie per hoofd van de bevolking in Nederland in de jaren 2005-2014 en maken daarbij onderscheid naar de volgend vleessoorten: rundvlees, varkensvlees, schapen- en geitenvlees, paardenvlees, pluimveevlees en totaal vlees.

    Op 7 augustus 2014 heeft Rusland een invoerverbod ingesteld op de invoer van vlees, zuivel en groente en fruit uit de EU. Door deze boycot moest de export een andere bestemming vinden. Niet alleen gold/geldt dat voor Nederlandse afzet, maar ook voor andere EU-landen. Hierdoor ontstond een fors prijseffect voor met name de verse groente en fruitproducten op de Europese markt, die na een korte periode overigens ook al weer afzwakte. Deze korte notitie gaat in op in hoeverre de Nederlandse export van de geboycotte producten zich met name na het afkondigen van de Russische importstop heeft ontwikkeld.

    This study identifies opportunities for the Dutch agribusiness sector (industry as well as research and education) in Kenyan meat value chains at all levels. It can serve as a background document for Dutch agro-food business companies as well as other stakeholders. At the moment there is increased interest in exploring agro-food business opportunities in Kenya. This report will guide potential and interested investors to areas of interest and potential business partners within the Kenyan meat sector, and indicates a number of areas and directions in which Dutch experience and capacity can assist in all aspects of the further development of the Kenyan meat sector.

    Food supply chains have inherent characteristics, such as variability in product quality and quality decay, which put specific demands on logistics decision making. Furthermore, food supply chain organization and control has changed significantly in the past decades by factors such as scale intensification and globalization. In practice, these characteristics and developments frequently lead to supply chain problems, such as high levels of product waste, product quality problems, and high logistics costs. Recent technological developments have created the opportunity to gather, process, and communicate more information on the status of processes and products to support logistics decision making, providing business opportunities to realize performance improvements, and add extra value by differentiating products to specific market segments. This will, however, require the development of effective logistics management strategies that ensure the supply of products of appropriate quality in a cost-effective way to each stage of the supply chain. This thesis studies the use of product quality information in logistics decision making in food supply chains, captured in the following central research question:

    How can the effectiveness of logistics decision making in food supply chains be improved using advanced product quality information?

    This research question is investigated using four case studies: two in the context of the European Q-porkchains project (i.e. in pork supply chains), and two in the context of the European Veg-i-Trade project (i.e. in fruit- and vegetable supply chains). In these cases we investigated the impact of variability in product quality and quality decay on chain processes and studied if use of product quality information can improve logistics decision making regarding product sourcing and process design. In each case decision support models were developed – in close cooperation with industrial partners - to quantify the impact.

    Case study 1: Process design for advanced sorting of meat products

    The first case study, presented in chapter 2, considers the process design of a meat processing company that seeks to add value by sorting meat products for a specific product quality feature. The relation between product sorting, processing efficiency and process design is investigated using a discrete event simulation model. Results indicate that increasing sorting complexity by use of advanced product quality information results in a reduction of processing efficiency, whereas use of production buffers was found to mitigate negative effects of high sorting complexity.

    The simulation allows practitioners facing segmented customer demand to assess which scenario offers the best trade-off between benefits and drawbacks resulting from efforts to improve responsiveness and flexibility.

    Case study 2: Livestock sourcing decisions

    The second case study considers a meat processing company that faces quality feature variation in animals delivered to its slaughterhouses. To support sourcing decisions and ensure that the right product quality is received at its slaughterhouses two stochastic programming models are developed that exploit product quality data gathered during earlier deliveries. The presented implementations reveal that uncertainty in supplied product quality can be reduced using historical farmer delivery data, which improves processing performance.

    Case study 3: Product sourcing in international strawberry supply chains

    The third case study relates to an international strawberry distributor that faces frequent product quality problems and substantial product waste. Different sourcing strategies were tested using a combination of both a slow, but cheap transport mode (i.e. sea and truck), and a faster, but more expensive mode (i.e. plane). The performance of these sourcing strategies is examined using a discrete-continuous chain simulation that includes microbiological growth models to predict quality decay. Simulation results reveal that standard cost parameters (that do not take quality decay into account) result in substantial product waste, but if cost for expected shelf-life losses are included in the order policies the effectiveness of product sourcing for the considered supply chain is improved.

    Case study 4: Use of form postponement for food waste reduction

    The fourth case study concerns an international lettuce supply chain that struggles with effective product sourcing. Form postponement (FP) is a supply chain strategy which delays processing steps until a demand is realized. This allows a reduction of the total inventory in the supply chain. We studied supply chain scenarios that differ in where and when in the supply chain whole crop lettuce is converted into processed lettuce products. A discrete-continuous chain simulation model revealed that application of FP reduced both product waste and age and improves point-of-sale product quality.

    Integrated findings

    The findings of this thesis demonstrate that decision makers can improve logistics decisions and reduce food waste by using product quality information and predicting changes in product quality. The developed quantitative decision support models provided essential insights into trade-offs resulting from information-based supply chain performance improvement strategies. The presented case studies demonstrate that supply chain flexibility and responsiveness is required to reduce the impact of product variability and product quality decay. Increasing responsiveness and flexibility typically comes at the expense of other performance dimensions.

    This research demonstrates the potential of use of product quality information in food supply chain logistics, which may contribute to the effectiveness of food supply chains by improving consumer satisfaction, reducing overall costs, and reducing food waste.

    Relations between the agri-food sector and society are a source of concern, in particular with regard to in-tensive livestock farming. The agri-food monitor project was set up in order to define and measure socie-ty's valuation of the agri-food sector. Because the concept of societal valuation also raises many questions, this parallel study was added in order to create space for reflection on societal valuation. The character of this reflection has been informed by widespread signals of ambivalence towards meat as well as the suspicion that because of that ambivalence people often do not want to know too many details about meat and livestock farming. This can complicate research into societal valuation. The leading ques-tion of this study is whether and how insights into ambivalence and strategic ignorance can be helpful for understanding societal valuation, in particular with respect to meat. Some questions on this topic have al-so been added to the agri-foodmonitor itself. Ambivalence (conflicting valuation) with respect to meat has increased in recent decades because on the one hand most people are attached to eating meat while on the other hand, a great deal of unsettling information on intensive livestock farming is in the air. Ambivalence leads to emotional agitation, especially when choices relating to cherished habits are involved. One way to deal with that agitation is to keep un-welcome information at a distance, in this case information about livestock farming. In doing so, people are 'strategically ignorant'. Ambivalences in society remain partly hidden by this mechanism. This study looked at the role of ambivalence and strategic ignorance by studying existing literature and by carrying out interviews with fifteen consumers about what they did and didn't want to know about food. Three themes received particular attention: rapid-growth broilers, the use of antibiotics in livestock farming and inspiration with respect to food.

    Red meat and colon cancer : how dietary heme initiates hyperproliferation

    Colorectal cancer is a leading cause of cancer deaths in Western countries. The risk to develop colorectal cancer is associated with the intake of red meat. Red meat contains the porphyrin pigment heme. Heme is an irritant for the colonic wall and it is previously shown that the addition of heme to the diet of rats induces hyperproliferation. Hyperproliferation increases the risk of endogenous mutations, which subsequently increases the risk to develop colon cancer. The aim of this thesis was to elucidate the diet-modulated signaling from an injured surface epithelium to the proliferative stem cells in the crypt to initiate compensatory hyperproliferation.

    In chapter 2 we showed that when heme is added to the diet of mice, there is an increased cytotoxicity of the colonic contents. Heme-fed mice showed decreased apoptosis and increased compensatory epithelial hyperproliferation resulting in hyperplasia. Gene expression levels of mouse colon after heme feeding were analyzed by microarrays and showed 3,710 differentially expressed genes (q<0.01) of which many were involved in proliferation and stress response. Stainings for the enzyme Heme oxygenase-1 and expression levels of heme- and stress-related genes showed that heme affected the epithelial surface cells, but that heme did not reach the crypt cells. Heme caused injury of the surface epithelial cells, and as proliferation originates from the stem cells in the crypts this implied that there must be a signaling mechanism from the injured surface to the stem cells in the crypts to start the hyperproliferation. In chapter 2 several surface to crypt signaling molecules were identified. Heme downregulated inhibitors of proliferation, such as Wnt inhibitory factor 1, Indian hedgehog and Bone morphogenetic protein 2. Furthermore, heme downregulated the cytokine Interleukin-15. Heme upregulated the expression of the growth factors Amphiregulin, Epiregulin and of Cyclooxygenase-2 mRNA in the surface. However, their protein/metabolite levels were not increased as heme induced surface-specific inhibition of translation by increasing the levels of the translation inhibitor 4E-BP1. We concluded that heme induced colonic hyperproliferation and hyperplasia by downregulating the surface to crypt signaling of feedback inhibitors of proliferation.

    Besides many proliferation and stress-related genes, many PPARα target genes were upregulated upon heme feeding. As PPARα is proposed to protect against oxidative stress and lipid peroxidation, we hypothesized in chapter 3 that absence of PPARα leads to more colonic surface injury, which subsequently leads to increased compensatory hyperproliferation in colonic crypts upon heme-feeding. This hypothesis was tested using wild-type and PPARα knockout mice receiving a heme diet. Proliferation levels and gene expression profiles were determined. Heme induced luminal cytotoxicity and lipid peroxidation to the same extent in wild-type and PPARα knockout mice. We showed that PPARα does not play a role in the heme-induced hyperproliferation, as heme induced hyperproliferation both in wild-type as well as in PPARα knockout mice. Stainings for alkaline phosphatase activity and expression levels of Vanin-1 and Nrf2-targets indicated a compromised antioxidant defense in the heme-fed PPARα knockout mice. We concluded that PPARα plays a protective role in colon against oxidative stress, but PPARα does not mediate heme-induced hyperproliferation. This implied that oxidative stress of surface cells is not the main determinant of heme-induced hyperproliferation and hyperplasia.

    Heme was shown to increase both reactive oxygen species as well as cytotoxicity of the colonic contents of mice. So far, the time dependency of the heme-induced oxidative stress and cytotoxic stress on the initiation of hyperproliferation was not studied. Therefore, in chapter 4 the effects of dietary heme on the colonic mucosa after 2, 4, 7 and 14 days of heme feeding were determined. This study showed that the effects of dietary heme on the colonic mucosa can be separated in acute and delayed effects. Acutely, heme increased oxidative stress which caused an increase in lipid peroxidation products. Besides, there was an acute activation of PPARα target genes, most probable induced by the generated oxidized lipids. Nrf2 target genes were activated acutely which played a role in the protection against oxidative stress. Delayed effects which occurred after day 4 of heme feeding, were increased luminal cytotoxicity and the induction of hyperproliferation. This suggested that the cytotoxicity, rather than oxidative stress, induced hyperproliferation. Remarkably, the surface epithelial cells sensed heme after day 4, although heme was present in the colon several hours after ingestion of the heme diet. This suggested that the mucus barrier played a role in the protection of the surface epithelium the first days of heme feeding.

    As the colon is densely populated by bacteria, the microbiota might play a role in modulating the surface to crypt signaling inducing hyperproliferation. To explore the role of the colonic microbiota we simultaneously investigated the effects of dietary heme on colonic microbiota and on the host mucosa of mice (chapter 5). Using 16S rRNA phylogenetic microarrays, it was determined that heme increased Bacteroidetes and decreased Firmicutes in colonic contents. This shift in the microbiota was most likely caused by a selective susceptibility of Gram-positive bacteria to heme cytotoxic fecal water. This susceptibility was not observed for Gram-negative bacteria and allowed the expansion of the Gram-negative community. The increased amount of Gram-negative bacteria, which likely caused an increased mucosal exposure to lipopolysaccharide (LPS), did not elicit a detectable immune reaction in the host mucosa. The absence of an immune reaction might be influenced by the strong upregulation of Secretory leukocyte peptidase inhibitor (Slpi) at gene and protein level, which is known to suppress excessive immune reactions. We showed that there was no functional change in the sensing of the bacteria by the mucosa, as changes in inflammation pathways and Toll- like receptor signaling were not detected. In conclusion, the change in microbiota did not cause the observed hyperproliferation and hyperplasia via inflammation pathways.

    In the study described in chapter 6 we investigated whether microbiota play a causal role in the heme-induced hyperproliferation. In this study mice received a control or a heme diet with or without broad spectrum antibiotics (Abx). Similar to previous experiments, heme induced epithelial hyperproliferation. Interestingly, when heme was administered together with Abx there was no induction of hyperproliferation. Heme induced oxidative stress in the heme group as well as in the heme plus Abx group. Cytotoxicity was also induced in both heme groups. As bacteria were decreased by 100 to 1000 fold in abundance upon Abx treatment it is unlikely that bacteria play a major role in the formation of the cytotoxic factor. Whole genome transcriptomics showed that Abx blocked the heme-induced differential expression of oncogenes, tumor suppressors and cell turnover genes. Moreover, Abx blocked the mucosal sensing of luminal cytotoxicity indicating that Abx increased the mucus barrier. Abx eliminated mucin-degrading bacteria, such as Akkermansia, and sulfate-reducing bacteria (SRBs) that produce sulfide. In-vitro studies showed that sulfide is more potent than N-acetylcysteine and cysteine in splitting disulfide bonds, indicating that SRB generated sulfide can denature mucins and thus open the mucus barrier. This study showed that the microbiota plays an important facilitating role in the heme-induced hyperproliferation and hyperplasia by breaking the mucus barrier and thereby decreasing the protection against luminal irritants such as the toxic heme metabolite.

Wijst deze tijdgeest op een groente-revolutie? Opmerkelijk is dat de vleesloze initiatieven met name van ngo's komen en (nog) niet van nationale overheden

    Vleesminderen is geen marginaal verschijnsel. Vleesminderaars 'light' - die minimaal 1 dag in de week vleesloos eten - vormen in Nederland een ruime meerderheid van 77,1% in 2012. In vergelijking met 2009 is het aantal 'light' vleesminderaars gestegen (van 69,5% naar 77,1%) en het aantal voltijds vleeseters ('vleesminnaars') flink gedaald (van 26,7% naar 18,4%). Hanteren we strengere definities, dan komen we uit op 42,5% van de onderzochte mensen die maximaal 4 dagen in de week vlees eet tijdens de hoofdmaaltijd, waarvan 14,8% die wekelijks hooguit 1 of 2 dagen vlees eet. Tellen we bij het laatstgenoemde percentage de 4,5% vleesmijders (vegetariërs en veganisten) op, dan eet bijna 20% van de respondenten vleesarm of vleesloos. Deze groep is van een vergelijkbare grootte als de groep van de vleesminnaars aan de andere kant van het spectrum.

    This report discusses simulations with the LEITAP model about opportunities to reduce land use as a consequence of changing meat consumption and production. In order to be able to generate plausible simulation results, the LEITAP model had to be adjusted. These changes are discussed in the first part of the report. The next part discusses the simulation experiments and their results. Finally, we discuss shortly where we stand with this type of analyses and what steps could be taken to improve on the quality of this type of analysis.
