Practices of Food Provisioning in Alternative Food Networks: How Different Practitioners Engage in Different Practices, Depending on Their Emotional Energy

In this article we combine social practice theory and interaction ritual theory to better understand the dynamics of learning processes in alternative food networks, and how these influence levels of alternative food network engagement. We apply this combination to the study of a solidarity purchasing group in southern Italy. We show that the levels of emotional energy built up between different groups of people within this solidarity purchasing group explain the extent to which participants are willing and able to overcome the practical difficulties associated with being part of the solidarity purchasing group, and change their routines accordingly. We recognize two different groups of users, with different levels of emotional energy; they vary according to the extent to which participants share motivations and understandings. The two groups attach different meanings to their involvement and associate those meanings with different activities that solidarity purchasing group engagement entails. We conclude that the two groups engage in different social practices – even though they are part of the same solidarity purchasing group. This finding provides insights into the heterogeneity both within and between alternative food networks as described in the literature; it explains different degrees of involvement, as well as reasons not to incur the practical costs associated with solidarity purchasing group involvement by quitting. Our study applies the idea of Weenink and Spaargaren that emotional energy can function as an explanatory force regarding why people engage in certain practices, and it sheds more light on how to define a practice.

The influence of internal (genetic and developmental) and external (environmental) factors on levels of flavonoid gene transcripts, enzyme activity and metabolites was studied in fruit of six cultivated strawberry (Fragaria × ananassa Duch.) genotypes grown at two Italian locations. Gene expression and enzyme activity showed development- and genotype-associated patterns, revealing gene coordination. Analysis clarified the regulation mechanism of the hydroxylation status of the B-ring of the major flavonoid pools and pointed out examples of genotype-specific post-transcriptional regulation mechanisms and key steps of pathway regulation in strawberry fruits. Metabolite profiles were strongly affected by development and genotype. Flavan-3-ols, their proanthocyanidin (PA) derivatives and anthocyanins were the most abundant metabolites. Flavonol levels and PA-associated traits (epicatechin/catechin ratio and mean degree of polymerization) showed significant environmental effects. Multivariate and correlation analyses determined the relationships among genes, enzymes and metabolites. The combined molecular and biochemical information elucidated more in depth the role of genetic and environmental factors on flavonoid metabolism during strawberry fruit development, highlighting the major impact of developmental processes, and revealing genotype-dependent differences and environmental effects on PA-related traits.

The biosynthesis of flavonoids and proanthocyanidins was studied in cultivated strawberry (Fragaria x ananassa) by combining biochemical and molecular approaches. Chemical analyses showed that ripe strawberries accumulate high amounts of pelargonidin-derived anthocyanins, and a larger pool of 3',4'-hydroxylated proanthocyanidins. Activities and properties of major recombinant enzymes were demonstrated by means of in vitro assays, with special emphasis on specificity for the biologically relevant 4'- and 3',4'-hydroxylated compounds. Only leucoanthocyanidin reductase showed a strict specificity for the 3',4'-hydroxylated leucocyanidin, while other enzymes accepted either hydroxylated substrate with different relative activity rates. The structure of late flavonoid pathway genes, leading to the synthesis of major compounds in ripe fruits, was elucidated. Complex developmental and spatial expression patterns were shown for phenylpropanoid and flavonoid genes in fruits throughout ripening as well as in leaves, petals and roots. The prototype "ENOBE" electronic nose is based on an array of eight thickness shear mode resonators (TSMR), also known in the literature as quartz microbalance sensors. The chemical sensitivity is given by molecular films of metalloporphyrins and similar compounds. Chemical interaction of compounds in the air with the vibrating sensors induces a frequency change of the vibration that can be measured as a signal. The air from the mouse cage had a strong odour (3490 OUE/m(3)). The biological membrane filter performed well, achieving over 80% odour and ammonia reduction. The electronic nose signal could be correlated with the inlet and outlet air-quality of the biological filter, making it a promising method for monitoring air quality in closed environments.
