Abstract

The current state of knowledge concerning the process of carcinogenesis, including the role of initiators and promoters is discussed, and foods of plant origin which contain naturally occurring carcinogens and mutagens are highlighted. Carcinogens and promoters, anticarcinogens and endogenous formation of mutagens and carcinogens are also covered. The mutagenic activity in some foods of plant origin is tabulated and the role of plant breeding in introducing or deleting the carcinogenic or anticarcinogenic properties in these foods is discussed.
